Super light and easy soup || Recipe

Hey Girls, in this post I want to share with you my favourite healthy recipe: my green soup! It is a super easy recipe to do and the ingredients can variate, If you prefere carrots instead of potatoes it ok, It depends on your taste.

INGREDIENTS for 1 person:

1 medium potatoe

2 medium carrots

100 gr peas

100 gr spinach

1/4 onion

Oil

Salt

Pepper and Parmesan cheese (optional)

RECIPE:

  1. Heat 2 tablespoons oil in a large skillet over high heat. Add onions and 1/4 teaspoon salt; cook, stirring frequently, until the onions begin to brown, about 5 minutes. Add potatos, carrots and peas, let them cook for 2 minutes and than add 300 ml water. Reduce the heat to low and cover. Stir frequently for 25 to 30 minutes.
  2. Puree the soup in the pot with an immersion blender until perfectly smooth or in a regular blender. Stir in a bit of pepper and parmesan cheese if you prefere. Taste and add more lemon juice, if desired. Garnish each bowl of soup with a drizzle of olive oil.

This is a recipe that I like to make when I want a healthy lunch or dinner. I love eating it with croutons, My favourite are the tomato falvoured one.
