The recipe:Italian piadina romagnola with egg plants and cherry tomatoes

After a long time i’m back with another recipe. I didn’t planned to do it but today, i was preparing my lunch and i thought: i really like this piadina, maybe i should share it with my readers and here i am writing about it. It is super easy and fast to make and the results will be incredibly delicious. I bought the piadina (is a typical italian  flat and unlevelled bread made in Emilia Romagna that is in the north of Italy) but if you don’t find it, you can make it your self. Usually the piadina is made with lard in the mixture, but i wanted it really simple and healthy. This recipe is for 4 person so halve the recipe if you are two.

ingredients for Piadina:

-you will need a skillet or a griddle (diameter 30 cm)

-rolling pin

-1 kg flour

-hot water

-salt

Preparation:

Mix gradually flour and water untill you have a dough. If your dough is too moist add more flour, knead energetically for 5-8 minutes, or until the dough is elastic. Cover the dough and let it rest for a half hour. After 30 minutes, take the dough,roll it out into a snake, divide it into 10 equal portions, and shape them into balls. Then, spread a little bit of flour on the table, put on ball on the flour and with a rolling pin untill it is a thin disc. Repeat this process with every ball.

Heat your skillet untill it’s hot and put your first piadina on it, cook it on one side and tamp down the bubbles with a spatula, after two minutes check the other side and when you think it’s done, flip it on the other side and let it cook.



Ingredients for the filling:
– egg plants cubes (as you want lol)
-cherry tomatoes (the same as above)

-olive oil

-salt



Preparation:

take a frying pan and heat it untill it’s hot. Then, add a table spoon of olive oil and egg plant cubes. let il cook fro 2 or 3 minutes, add a little bit of water, and let it cook covered for 5 to 10 minutes, it depends on how cooked you want the egg plants cubes. Now take you cherry tomatoes and cut it into 4 parts, add a little bit of olive oil and salt and mix it very well. Now take your piadina, put your cubes and tomatoes in the middle of the piadina, close it and it’s ready to be eaten.
